Caramel

Servings:
1 cup heavey cream Mix/Melt Mix
Cook to 245-250F
4 tablespoons butter
1/4 teaspoons salt
1.5 cups sugar Cook to 250F (soft) - 325F (firm)
1/4 cup corn syrup
1/4 cup water

Notes:

Minimize stirring

Salted:

Increase salt to 2 teaspoons

Chocolate:

Increase cream to 1.5 cup, add 10oz chocolate with it

Gingerbread:

Add 2 tablespoons molasses to sugar. Add 1/2 teaspoon cinnamon, 1/2 teaspoon ginger, 1/4 teaspoon nutmeg, 1/8 teaspoon cloves with vanilla
